Salmon Dinner
This worked for me on 31Oct2021, dinner with Bruce, Ellie, Kimberlee.
Cedar plank salmon on Traeger grill
- Soak plank in water
- Season skinless salmon with salt/pepper
- Heat plank for 20 minutes at 350
- Cook salmon on plank with lemon slice
Add lemon-dill butter just before removing salmon from grill.
Place salmon on cedar directly on table to serve.
Lemon-Dill Butter:
- Bring stick of butter to room temperature
- Add 1 T lemon juice, lemon zest and 2 T chopped fresh dill
Mashed Sweet Potatoes
- Peel 6 sweet potatoes / yams, cut into chunks
- Boil for 20-30 minutes
- Mash with butter, milk and maple syrup
Put into casserole dish and keep in oven at 200 until ready to serve
Green Salad
- Head of green lettuce
- Thinly sliced tomatoes
- Thinly sliced cucumber
- Small can of mandarin oranges
- 1/2 pint of feta cheese
- Balsamic dressing
- Prepare all ingredients and then throw it all together just before eating
What Worked:
- Fish and sweet potatoes were hot when served
- Everything tasted good
- The thinly sliced items sat better in the salad - compared to large chunks. I like this improvement.
Next Time:
- Let butter sit out for many hours to soften
